Quick tuna, almonds and raisins risotto
The recipe for risotto, the Italian specialty, revisited with tuna and almonds.

Cut the broccoli into bunches and cook them in water or steam for 5 minutes.

Mince the onion.

Heat a little oil in a pan, add the onions and add a splash of water.

Over high heat, stir-fry for 1 minute, stirring regularly.

Add the mushrooms and let them cook for 4 to 5 minutes, then deglaze with balsamic vinegar; reduce the heat.

Add the tuna, raisins, broccoli, soy sauce (unsweetened!!!), a few drops of nuoc mam sauce, lemon juice, and paprika (1 tablespoon); stir well.

Cover and let simmer for 5 minutes.

Add the rice and stir well; if there is too much liquid at the bottom, reduce it for a few minutes uncovered.

Coarsely grind the almonds.

Serve the rice with almonds on top.
