    Peel and deseed the tomatoes.

    Cut them into quarters.

    Peel the garlic.

    Preheat the oven to 60°C, th

    Arrange the tomato quarters on the oven racks.

    Place them in the oven above the baking tray.

    Season with coarse salt.

    Let dry for 4 hours at low heat 60°c. Check occasionally.

    Allow to cool completely.

    Fill the jars with the tomatoes.

    Pour olive oil to cover.

    In each jar, add 2 garlic cloves and 1 sprig of thyme.

    These tomatoes can be stored for about ten days in the refrigerator.
