In a large bowl, pour the 250 gr of flour in a circular motion to create a well in the middle, and place 2 eggs and the sugar inside.

Mix by hand, starting from the center and incorporating the remaining 50 gr of flour, then add the butter (melted or softened), a pinch of salt, some lemon zest, and a pinch of cinnamon.

Continue kneading for 4 minutes to homogenize the dough and form a compact ball, then place it in the fridge for 1 to 2 hours (until chilled).

Take out the dough, flatten it on a baking sheet until its thickness is below 5 mm.
