    Peel the potatoes (cut them into quarters if they are large).

    Brush with oil.

    Add salt, pepper, and sprinkle with Provence herbs.

    Place the roast in a baking dish, surround it with potatoes, pour water at the bottom of the dish and cover everything with aluminum foil.

    Bake for 45 minutes at 180°C.

    After 15 minutes of cooking, remove the aluminum foil and baste the roast frequently with the cooking juices.
