Zaatar Manakish
A traditional Lebanese recipe with zaatar spices that pairs perfectly with an appetizer dip or an eastern main dish.

In a bowl, mix the yeast and warm water, then add the sugar, stir to dissolve and keep aside for 10 minutes.

Sift the flour into a mixing bowl, add the salt and make a well in the center.

Slowly pour the yeast and water mixture, stirring continuously, then by hand when the dough forms, then add the olive oil (1 tablespoon).

Continue working the dough for a few minutes, then form medium-sized balls (the size of an orange), and flatten them with a rolling pin.

In a bowl, mix the spices and 2 cups of olive oil, then prick the cookies and brush them with this seasoning, finishing with sesame seeds.

Bake on parchment paper for 5 minutes in the oven and remove when the edges are golden.
