In a mixing bowl, mix the flour, one egg yolk (save the whites), a pinch of salt, and 15 cl hot water (add more if necessary)

Work the dough until you get a homogeneous ball, well smooth, then let it rest for 30 minutes

Peel, core, and dice the apples into small cubes and pour them into a mixing bowl with the raisins, sugar, walnuts, breadcrumbs, butter, and cinnamon while stirring

Roll out the dough on your work surface to make a rectangle, and brush it with egg white

Spread the filling on the dough, leaving 2 cm on each side, then roll up the dough and bake on parchment paper at 225Β°C for 30 minutes
