Clean the clams under water and dry them. In a large pan, add a drizzle of olive oil and sautΓ© one minced garlic clove for 1 min, then add the clams, 15 cl of white wine, and let the alcohol evaporate. Once the clams open, keep the cooking juice in a bowl and transfer the clams to a dish. In a Dutch oven, cook 4 slices of smoked bacon without added fat over medium heat until crispy. Peel and dice the potatoes, slice the onions and celery stalks, then add everything to the Dutch oven with the rendered fat. Pour the clam broth into the Dutch oven, bring to a boil, add chopped parsley, thyme, and bay leaf, cover, and simmer for 15 min. Add the clams, milk, and cream, and cook one last time for 15 minutes until reduced enough to be creamy. Serve hot.
