Smoked Salmon Potato Velouté
Taste a Finnish specialty, salmon potato soup!

Peel and chop the onion.

Peel and wash the potatoes.

Cut the salmon into slices.

Cut the potatoes into large cubes.

Put the oil in a pan to heat up and sauté the chopped onion.

Add the potatoes, salt, and pepper and deglaze with white wine.

Add the vegetable broth and bring to a boil, then let it simmer covered for 20 minutes.

Using a blender, puree the potatoes into a very fine purée.

Pour the cream on top and mix well.

Add lemon juice, salt, and pepper.

Blend the velouté again before serving.

Place slices of smoked salmon at the bottom of the plates and pour the velouté over them.

Sprinkle with a little freshly ground black pepper and serve immediately.
