Cut your Jerusalem artichokes, potatoes, and onion into small cubes and fry them in a pan for 15 to 20 minutes. In a saucepan, melt 40 gr of butter, add 2 tablespoons of flour, 30 cl of milk, mix, and season with garlic powder and turmeric until you get a béchamel consistency. In a tart dish, spread the puff pastry, add the ham in small pieces, the potatoes, onion, sprinkle with 70 gr of Gruyère cheese, and finish with the béchamel. Bake in the oven for 25 minutes at 200°C.
