Peel and wash the salsify, then cut it into small pieces. Chop the garlic, onions, parsley, and slice the carrots. Add a drizzle of olive oil to the tajine (or a casserole), and sautΓ© the chopped onion and garlic. Add the pieces of salsify and carrots, mix, then add the olives and parsley. Season with a pinch of saffron and nutmeg, salt, and pepper, and pour in 15 cl of hot water. Simmer for 35 minutes on low heat.
