How to prepare Beef Roll-Up?

    Translate the following text from French to English:   Cut slices of liver that are wide but thin.

      Peel and julienne the mushrooms, chop them, then sweat them in a third of the butter.

    When they are cooked, add the cream and sprinkle with a pinch of paprika, let cool.

      Chop parsley, chive, and shallot, mix this chopped mixture with 25 gr of slightly softened butter.

    Season and pepper.

    Spread the liver slices with this mixture and keep in the refrigerator for about half an hour.

      Once this time elapsed, spread the mushrooms at the center of the liver slices (butter side), roll up and tie them.

      When they are well browned, deglaze with juniper berries and flame them.
