Reduce the fish stock in an oven at moderate heat until you obtain a preparation of only 3 tablespoons.

Cut the asparagus into short segments, place them in a baking dish, season with salt and drizzle with a light olive oil, bake and cook for 10 minutes by turning them occasionally.

Return the reduced stock to heat with the cream and cook until you obtain a thick sauce or a crepe-like consistency, drizzle with a few drops of orange juice, adjust seasoning, reserve.

Sauté the scallops in a pan with a little olive oil for 2 minutes by turning them halfway through cooking, season and drain them.

Arrange the asparagus and scallops aesthetically on a plate, pour over with a sauce thread.
