How to prepare Piperade?

    Cut the onion into thin slices and sautΓ© it on low heat in the oil without letting it brown (avoid using a thin iron skillet, where gentle cooking is not possible and tomatoes become bitter).

    Also, cut the bell peppers in half lengthwise and remove their seeds.

    Cut them into large pieces and add them to the pan.

    Cover and let simmer on low heat for 20 minutes. Peel the tomatoes, cut each one into four parts, squeeze them gently if necessary to extract some water, and add them to the preparation along with the diced ham. Season (be careful with the salt due to the ham).

    Cook for about 30 minutes until the juice has evaporated.

    Just before serving, break the eggs over the preparation and quickly stir them with a wooden spoon until they have the consistency of scrambled eggs.

    Slide the piperrada into a preheated long dish, sprinkle with chopped parsley and serve immediately.
