How to prepare Sweet-and-sour scallops?

    Peel and cut the carrots into rounds to cook them for 10 minutes in boiling salted water.

    Drain and blend them.

    Add the eggs, half of the cream and a little salt, then remix everything to get a smooth preparation.

    Add the chives.

    Preheat the oven to 130Β°C. Pour the preparation into a greased flan mold.

    Bake for 30 minutes at 130Β°C in a water bath.

    In a pan, put the shallots cut with vinegar and port and let reduce until dry.
