    Preheat the oven to 130°C.

    Place the slices of parmesan ham on a baking sheet lined with parchment paper.

    Bake for 15 to 20 minutes, until the slices are dry.

    Preparation of the panna cotta :

    Soak the gelatin leaves in cold water for 5 to 10 minutes.

    In a saucepan, bring the milk and cream to a boil.

    Add the grated parmesan and let it melt by stirring occasionally.

    Add the gelatin.

    Season with salt and pepper.

    Divide the mixture into 6 ramekins.

    Refrigerate for at least 1 hour.

    Dressing :

    unmold your panna cotta: run a knife along the sides to loosen them, then turn them out onto a plate.

    Place slices of parmesan ham on top of the panna cotta.

    Decorate your plate with some granny apple cubes and a drizzle of balsamic vinegar cream.
