Pineapple fritters
For a snack or mardi gra, give in to these creole beignets!

Prepare the orange yogurt sauce with yogurt, orange zest, sugar, and orange juice.

Prepare the frying dough: in a bowl, make a well with the flour, add a pinch of salt, whole egg, and beer.

Mix well using a whisk to make the dough homogeneous.

Beat the 2 whites until firm peaks form, then gently fold them into the dough using a wooden spoon.

Let it rest for 15 minutes. Remove the pineapple skin, cut its flesh into 1 cm square sticks.

Heat the frying oil. When it is hot, dip the pineapple sticks in the frying dough and immediately plunge them directly into the fryer.

Fry for 3 minutes until the dough turns golden.

Remove the fried sticks, then drain them on absorbent paper.

Serve the beignets on a plate with the orange yogurt sauce on the side.

Decorate this with segments of orange and, if desired, fresh mint leaves.
