Cut the salmon into squares no thicker than 2cm, heat the wok and a pot of salted water with rice

When the fire in the wok is strong, pour a drizzle of olive oil and cover with your spinach sprouts

Once the sprouts have shrunk nicely, add a few drops of soy sauce and some freshly ground pepper to the wok

Add the salmon cubes and mix to prevent sticking

Once the salmon is well browned, drizzle with more soy sauce and pepper

Drain the rice from its water, then add two tablespoons of olive oil before pouring the rice into the wok
