How to prepare Eel Soup?

    Skin, wash, and clean the eels.

    Cut them into pieces.

    Remove the stems from the sorrel leaves.

    Keep 5 or 6 whole leaves aside.

    Chop the rest along with the chopped parsley and chervil.

    In the pot, put the eel pieces, cover with all the chopped herbs, onions, and garlic, and add 2 liters of water.

    Cook for 30 minutes on low heat, keeping the pot covered.

    To serve, place the egg yolks, cream, and a few drops of lemon juice at the bottom of the soup bowl.
