Skin, wash, and clean the eels.

Remove the stems from the sorrel leaves.

Keep 5 or 6 whole leaves aside.

Chop the rest along with the chopped parsley and chervil.

In the pot, put the eel pieces, cover with all the chopped herbs, onions, and garlic, and add 2 liters of water.

Cook for 30 minutes on low heat, keeping the pot covered.
