In a saucepan, melt 2/3 of the butter on very low heat.

In a separate bowl, crack the eggs and beat them to make an omelette.

Pourse this omelette into the pan containing the melted butter, stir with a wooden spoon and keep over very low heat.

Stir the eggs very frequently, being careful not to have them stick.

While that is cooking, steam or boil the asparagus.

When they are cooked, cut off the tips and set aside.

Cut the stems into 5 mm sections and add them to the eggs which should be slowly cooking in the pan.

In a small skillet, grill the slices of smoked bacon until golden and crispy.

Place them on a wooden cutting board to cool down flat.

Once cooled, cut them into pieces about 2 cm long.

In the same skillet without cleaning it, sauté the asparagus heads until they are slightly browned.
