Core the strawberries and wash them.

Blend and strain through a fine mesh sieve to remove the seeds.

Mix together the white cheese, small Swiss cheese, green lemon juice, and sugars.

Fold in the strawberry juice.

Whip the whites until stiff with a pinch of salt.

Gently fold (without breaking them) the whipped whites into the strawberry/cheese mixture.

Put in the ice cream maker (then freeze for 3 hours), or directly in the freezer for 6 hours.
