    Slice the lemon grass into rounds then finely chop all the herbs, garlic, ginger, and onions Mix everything in a blender adding one or two tablespoons of coconut milk to get green curry In a saucepan, boil a can of coconut milk for 10 minutes Peel the eggplants and cut them into small cubes Pour a drizzle of oil into a pan and fry the eggplants for 2 minutes, adding 2 tablespoons of green curry Once the eggplants are cooked, pour everything into the saucepan and add 2 tablespoons of fish sauce, one teaspoon of sugar, 4 tablespoons of green curry and let it boil for 10 minutes Add your peeled shrimp and thinly sliced bell peppers, and let it boil until the shrimp turn pink Transfer everything to a bowl or dish, and season with chopped basil and coriander
