Have your butcher flatten the cutlets.

Carefully clean the morels.

Chop a third of these mushrooms and mix them with the sausage meat, add the egg, seasoning, and parsley to form a homogeneous filling.

Place one or two tablespoons of filling on each cutlet, roll, and tie.

Brown the roulades in a Dutch oven with butter, season, then deglaze with white wine.

Cover and simmer gently for 1 hour.

Three-quarters through cooking, add the remaining morels, and just before serving, add the cream.

Adjust the seasoning of the sauce accordingly.
