    Peel and wash the potatoes well, cut them into small cubes, put them in the steaming basket of a steamer, add water, cover, and cook for about 25 minutes, then transfer them to a mixing bowl, let cool.

    In the meantime, peel and wash the carrots thoroughly, cut them into very thin sticks, blanch them in boiling water for 2 minutes, then drain them.

    Peel the avocados, split them open, remove the pit, chop them into small cubes as well, place them in a shallow bowl, sprinkle with lemon juice, season by mixing everything together.

    Mix the potato cubes with the avocado cubes and lemon juice, pour heavy cream over it, adjust seasoning by mixing.

    Arrange the carrot sticks in 3 large glasses, then push down the fajitas to give them a conical shape, fill them with the potato avocado tartare and some of your chopped tomato.
