    Rinse the veal heart under running water, trim if necessary the blood vessels.

    Peel the carrots and cut into 5 cm batons, peel the onions and chop them.

    Melt the butter in a casserole and quickly sear the heart over high heat.

  4. 4

    When it has browned on all sides, reduce the heat to minimum, add to the casserole the onions and the unpeeled garlic cloves, then the carrots, the pepper, and salt last.

    Cover the casserole and cook for 1½ to 2 hours over very low heat, turning the heart 2 or 3 times during cooking.

    Serve well heated with the garlic cloves that each person will open on their plate.
