Eggplant Quiche
An ideal way to cook eggplants and make them outrageously delicious!

To start, prepare the dough: in a bowl, put the flour and salt, add cubed butter and work with your fingertips.

Add a little water then knead again.

Form a ball and let it rest for 1 hour, covering it with a damp cloth.

Meanwhile, cut the eggplants into regular slices.

Then, chop the onions, dice the previously seeded tomatoes.

In a pan, heat one tablespoon of olive oil.

Fry the onions and eggplants until they turn golden brown.

Then add the tomatoes, thyme, oregano, crushed garlic, salt, and pepper.

Let it simmer for 15 minutes on medium heat: the preparation should lose its liquid.
