    Blend the fish meat in a mixer, then add to this puree the flour, butter, heavy cream, and whole beaten eggs.

    Season, then incorporate the whipped egg whites in peaks.

    Fill a buttered mold with this preparation.

    Cook in a hot then medium oven and in a water bath for 1 hour.

    Meanwhile, prepare the sauce: make a brown roux with the butter and flour, deglaze with milk and fish stock, thicken for 10 minutes while stirring, season, add the shrimp butter and cream.

    To serve, unmold the hot fish loaf, pour over it the warm sauce, decorate with shrimps and serve immediately.
