Lamb Sauté with Grapefruit

Cut the meat into cubes, brown them in hot fat without burning.

Add the peeled and finely chopped shallots, salt, and add the roughly crushed green peppercorns.

Deglaze with white wine and Noilly Prat.

Cover and cook for 1 hour and 15 minutes (25 minutes in a pressure cooker).

Halfway through cooking, add the washed raisins.

When the veal is cooked, remove it and keep it warm on the serving dish.

Mix the cream and cornstarch, and add everything to the sauce.

Peel the bitter oranges in one piece, add the juice that runs into the sauce along with the orange quarters.
