Break the coconut then scrape to recover the flesh

Boil 50 cl of water with the coconut meat, a vanilla pod (split), a lime zest, a pinch of nutmeg and cinnamon for 30 minutes to obtain jam

Let it cool and in the meantime, cover your cake mold with pastry crust (poked with a fork), then mix in a bowl the coconut jam and the pastry cream

Pour the mixture into the cake mold, use the bowl to beat the eggs with sugar then slowly add the flour to thicken without forming lumps
