    Wash the mint well, chop it finely.

    Put the sugar in a saucepan, add the water, cook on very low heat for 7 minutes and stir continuously.

    Let the syrup cool down and add the chopped mint.

    Pour the mixture into an ice cream maker.

    Serve the raspberry coulis in glasses and garnish with mint ice cream balls.
