Poach the Pear Pour poach a pear, pour in large saucepan, pour water and add sugar, zest of lemon, split vanilla bean pod and squeeze in lemon juice.

Bring the syrup to a boil.

Peel the pear with a vegetable peeler, cut it in half, and remove the seeds. When the syrup comes to a boil, reduce heat and place the pear in it; ensure the pear is completely submerged.

Simmer for about 15 minutes.

The pears are cooked when they become translucent and a knife tip can easily be inserted and removed.

Allow the poached pear to cool in the syrup.

Chocolate Sauce In a saucepan, heat the heavy cream.

While heating the cream, break the chocolate into pieces.

Add the chocolate pieces to the cream along with a tablespoon of sugar and mix well.

If the sauce is too thick, add some poaching syrup; if it's too thin, add more chocolate to make it smooth.

Keep warm.

Dressing Place half a pear in a bowl, generously pour over warm chocolate sauce, garnish with slivered almonds.
