Spaghetti with ham, spicy tomato sauce
A simple, traditional recipe with a twist of pep!

Rinse the tomatoes, cut them into quarters, remove the seeds and then dice them (purists can also peel them by blanching the tomatoes for 30 seconds).

Finely chop the shallots, sauté them in the oil, then add the peppers by opening them a little.

When the shallots are golden, add the tomato cubes, then cover and stir occasionally.

Add the herbs and adjust the seasoning with salt and pepper (taste!!), let it simmer..

Boil water for the pasta, meanwhile cut the ham slices into small squares.

Once the pasta is cooked, add a drizzle of olive oil to it.

Use the still-warm pasta pan to melt a knob of butter in it and quickly sauté the ham.

Add the cream to the sauce, melt a handful of cheese in it and add the ham.

Mix the sauce directly with the pasta and serve without delay.

Sprinkle the remaining cheese over the plates.
