Boil the potatoes after washing them in salted water.

Chop the onion and garlic.

SautΓ© the onion in olive oil then add a pinch of paprika and the chopped garlic. Mix well.

Add tomato paste, mustard, bay leaf, a pinch of salt, a pinch of sugar, and a little Espelette pepper.

Let it simmer then add a small glass of white wine. Season with salt and pepper.

Drain the cooked potatoes and cut them into cubes.
