Cut your rooster into pieces and sauté them with a bit of butter in a large pan. In a casserole dish, pour a drizzle of oil, add your chopped onion, finely minced garlic clove, then the rooster pieces and let them brown for 5 min. Pour 1 liter of red wine, cover, and let it simmer for 1h. In a pan, sauté your mushrooms and finely chopped shallot in a bit of butter. Once the mushrooms are well seared, remove them and add the chicken bouillon cube diluted in hot water. When the mixture is reduced, add the sour cream and the beef stock diluted in water then let it cook on low heat until you have a sauce consistency. Once the rooster is cooked, take out the pieces and empty the casserole, then pass the rooster through one last cooking for about a minute and serve covered with forestière sauce, with a cherry tomato per plate.
