Pour 2 cuillères à soupe d’olive oil in a Dutch oven and cook your lamb shanks for one minute, turning them over and then remove them. Replace them with finely chopped onions, and once they whiten, add the meat seasoning it with salt, pepper, cumin, and ginger. Add thyme, garlic (without cutting), 25 cl of hot water, and let cook in a covered Dutch oven for 45 minutes. Use this cooking time to trim the green beans, peel the carrots and turnips, and cut them into slices or quarters. Add the vegetables to the Dutch oven 20 minutes before the end of cooking. Sauté the vegetables for 2 minutes with a drizzle of oil to crisp them up. Serve the lamb shanks and small vegetables hot with a small dauphinoise gratin.
