Place the water and salt in a large pot, bring to a boil, add the crozets and let cook for 30 minutes, then drain them. Slice the beaufort cheese thinly. Peel the onions and cut them into small pieces. Melt the butter in a pan and sauté the onions. In a mixing bowl, combine the cooked crozets, cooked onions, cream, egg yolk, diced ham, salt, pepper, and nutmeg; mix well. Transfer the mixture to a buttered gratin dish and distribute the slices of beaufort cheese, sprinkle with breadcrumbs. Bake in an oven preheated to 200°C for 15 minutes. Serve immediately.
