    Peel and devein the shrimp

    Peel and chop the onion; remove the seeds and slice the bell pepper

    In a pan, sauté the onion in oil until golden, then add the sliced bell pepper; cook on low heat for a few minutes (the bell pepper should remain crunchy)

    Add the soy sprouts, drained bamboo shoots, diluted tomato concentrate with 2 tablespoons of water and coconut milk

    Cook for a few more minutes to reduce the sauce, then add the shrimp and curry powder (about 1 tablespoon)
