Separate the whites from the yolks of 6 eggs then pour them into two bowls and beat the yolks while gradually adding the 250 gr of sugar.

Once the mixture is whitened, add 150 gr of flour, a tablespoon of cinnamon, rum, and continue to mix.

Beat the egg whites until stiff and fold them into the preparation then pour everything into a buttered and floured cake pan.

Bake for 35 min at oven setting

In a small saucepan, pour coconut milk and a split vanilla bean then bring to boil.

In another larger saucepan, pour 3 egg yolks and 150 gr of sugar, beat the mixture then add 50 gr of flour, and the boiled coconut milk.

Cut your cooled cake in half horizontally, soak each side with one or two tablespoons of rum then spread the prepared cream.
