Start by preparing the crème anglaise: bring the milk to a boil, mix the yolks vigorously with the sugar and vanilla, then add the gelatin leaves to cold water.

Pourse it over the hot milk and stir actively right away.

Cook without boiling while stirring continuously.

Once off the heat, add to the warm cream the previously 'squeezed' gelatin leaves.

Strain everything through a fine sieve, then let cool.

Whip the fresh cream into whipped cream by incorporating the icing sugar.

Butter the bavarois mold.

Blend the banana pulp and lemon juice.

Mix this pulp with the cooled crème anglaise.

Finally, incorporate the whipped cream into your mixture.

Fill the mold up to 1cm from the edge and let set in the refrigerator for 4 to 5 hours (or overnight).

Demould by possibly dipping the mold in hot water after loosening the edges with a knife blade.
