    In an airtight container, place the meat, onions cut into quarters, carrots sliced into rounds, rosemary, sage, herb bouquet, olive oil, coarse salt, pepper, marc, and then the wine. Marinate in the refrigerator for 5 hours.

    First, drain and pat the meat dry with absorbent paper. Melt 30 g of butter in a Dutch oven (cast iron), then sear the meat for 5 minutes over high heat. Add only the other marinade ingredients plus mushrooms, cook for another 5 minutes. Dust everything with flour until it’s all white. Mix well and then pour in the marinade juice. Cook on low heat for 2 hours, stirring occasionally. Just before serving (off the heat), add 2 tablespoons of wine to serve at the table.
