Trim the endives as lightly as possible and wash them, then dry.

Put the butter in the casserole.

Gently heat it up, then arrange the endives in the casserole with no more than two layers.

Season with salt, pepper, or nutmeg.

Cover the endives with a parchment paper that has been buttered, then close the casserole (the parchment is optional, but helpful).

Cook gently for about 30 minutes.

Turn the endives, reapply the paper and lid, continue cooking for another 30 minutes.

Check the seasoning, pierce with a fork to assess doneness.

Plate in a warm dish with the cooking juice.

You can boil the endives in salted water for 10 minutes, drain them, then finish their cooking in the casserole with butter.
