Do not peel either the eggplants or zucchini: cut them into not too large pieces.

Remove the seeds from the peppers and slice them into strips.

SautΓ© each of the three vegetables separately in olive oil with salt, pepper, and a crushed garlic clove.

Cook them over medium heat until they are very tender, about 30 minutes.

Β While this is cooking, prepare a tomato sauce by first sautΓ©ing finely chopped onions to which you will add peeled and diced tomatoes, a crushed garlic clove, the herb bouquet, salt, and pepper.

The sauce should be thick and smooth.
