Halve the avocados, remove the pits, and cut into small dice. Combine the mango and avocado in a mixing bowl, mix, cover, and chill for 30 minutes. Serve the contents of the mixing bowl onto plates, topped with the langoustines. Mix the oil, pepper, and vinegar in a bowl and dress your plates. Add a gressin to decorate each plate.
