In a pot, add a drizzle of oil and cook your beef pieces by adding the chopped onions and enough flour to coat the meat. Let it cook for 2 minutes then add salt, pepper, two sprigs of thyme, and 3 bay leaves. Cover with tomato sauce and simmer in a Dutch oven for 2 to 3 hours. Add the marrow bones 20 minutes before the end of cooking to infuse the flavor. Serve hot with potatoes or pasta.
