Dauphin Potato Puree (Thermomix)
It's not always easy to make dauphine potatoes, but with a Thermomix, it becomes child's play. So tender and flavorful, you can fit them all in one bite!

The choux pastry: Place the water, butter, and salt in the bowl and cook for 5 minutes at 100°, speed 2.

Add the flour and mix for 1 minute 30 seconds at speed 2, adding the eggs one by one through the lid while the machine is running at speed 5. Let it run. Reserve in a bowl; no need to wash the bowl.

The puree: Place all the puree ingredients in the bowl and mix for 15 seconds at speed 5, stirring with a spatula to ensure the preparation is homogeneous. If necessary, mix for an additional few seconds at the same speed.

Add the choux pastry, mix using the spatula to thoroughly blend the two textures.

Take small spoonfuls of dough, roll into balls and drop them in hot oil at about 160 degrees. When the Dauphin pommes rise to the surface and are golden on one side, turn them over. Drain the Dauphin pommes on paper towels once they are well browned.
