    Wash and cut the eggplants into slices 5 mm thick.

    Cook them on the grill of the oven at 200°C for about 40 minutes.

    Make sure they are a bit dry.

    Dip one side of the eggplant slices in beaten egg and then coat with breadcrumbs.

    On the side without breadcrumbs, add a slice of ham, then a slice of mozzarella.

    Season with salt and pepper, then add the other slice of eggplant to form like a croque-monsieur.

    Cook quickly in a pan in a little oil.
