    When you lift the whisk, the batter should pour like a thread.

    Once the mixture has doubled in volume, remove the bowl from the bain-marie and continue beating until it cools down.

    Gradually incorporate the flour while continuing to mix to prevent the mixture from deflating.

    Place and spread the dough on a baking sheet lined with parchment paper and bake at 180°C in the oven.
