Separate the egg whites from the yolks.

Put the yolks in the mixing bowl of the Thermomix and add the mascarpone, sugar, and seeds from the vanilla pod.

Using the Thermomix, mix for 15 seconds at speed

Then mix for another 15 seconds at speed

Set aside in a dish and rinse the bowl.

Put the egg whites in the mixing bowl with a pinch of salt on speed whisk.

Whisk for 3 minutes at speed 3.5 (at first start on speed 1 then increase to speed

Gently fold the whipped egg whites into the previous mascarpone and yolk mixture.

Wash the pears, peel them, cut them, and dice them (small cubes).

For the verrines presentation: crumble 2 biscuits, add small pieces of pear, and finally a layer of the mascarpone mixture.

With the remaining 2 biscuits, decorate the tops of the verrines with slices.
