Prepare the swordfish by removing the fins, skin, and bones, then cut it into 2 cm thick cubes.

Mix with a pinch of coarse salt.

Finely slice the onion and ginger.

In a large frying pan, pour a drizzle of sunflower oil over high heat, then add the swordfish.

Sear until they release their water, 3 minutes on each side.

Switch to low heat, and add the ginger, turmeric, garlic, and tomato.

Let it simmer for 30 minutes. Cook the rice in boiling water about 10 minutes. Drain and set aside.

Sear the onion in olive oil, then add the beans and let them reduce over medium heat for 10 minutes. Make small blocks of rice using a buttered ramekin that you fill and quickly flip onto the plate.

Drain your beans, add to the rest of the curry, mix and serve with the rice.
