Fold any excess pastry that extends beyond the edges of the dish to form the crust of the tart.

Blanch the lamb's quarters in salted boiling water for 15 minutes, then drain and set aside.

In a skillet, heat the olive oil and sauté the chopped onions with a tablespoon of sugar until golden brown.

In a small bowl, beat the eggs with a pinch of salt and pepper, then add the cream (for thinning, add 1/2 cup of water).
