How to prepare Crab Soufflé?

    Dissolve the cornstarch in half of the cold milk.

    Melt the butter in a saucepan, add the dissolved cornstarch and the remaining milk.

    Stir over low heat, season, add the tomato concentrate and the drained and crumbled crab.

    Remove from heat, mix in the egg yolks, then gently fold in the beaten egg whites.

    Pour the mixture into a greased soufflé dish (to two-thirds of its height).
